He was born in Quito, Ecuador on 09/21/1956. He was one 7 children. At a very early age Luis showed a heavy interest in culinary arts. Luis and his siblings lost their parents and entered the workforce at an early age, yet Luis showed perseverance and managed to gain academic achievements in baking and cake decorating, he earned 3 years of college in Columbia before leaving Ecuador to the United States.
At the age of 25, He continued to pursue his love of food and music where he fell in love and joined his life with Elsa Susana Herrera. He used his love of music, energetic spirit and great culinary skills to win her over. They joined their lives for the next 33 years and traveled to various locations as they raised their children Hector Daniel Perez and Denise Gallippo (Sebaly) . They shared their various passions for karaoke, vacations to Vegas, Beaches, visiting grandchildren in Michigan, Chicago, and Virginia. He is preceded in death by his parents Ramon Jimenez Romero, Julia Merchan, his sister Cecilia Jimenez Merchan.
He leaves behind Elsa Susana Herrera(Susy), Children -Denise Gallippo (Sebaly), and Hector Perez, Grandchildren Christina Herrera (Christopher Buckley) Adam Vasquez (Casandra Vasquez), Samantha Gallippo (Carlos Benitez) and grandchildren Adrianna Vasquez, Sydney Garcia, David Vasquez, Abigail Vasquez, Oliver Garcia ,Madeline Vasquez .
